    Då författaren själv äter kött och fisk är detta inte en pekpinne att alla måste bli veganer. Dock har Hugh insett att är emot fakbriksjordbruk med plågsam djurskötsel. Sedan fick han barn och blev medellåders och fick förhöjda blodvärden. Vidare har han satt sig in i miljöpåverkan. Det han ser som en viktig faktor för alla dessa saker är att alla äter mer grönsaker. Vidare tyckte han att kokböcker för vegetarianer och veganer hade låg kvalitet.
