Aktuell steht die Weltbevölkerungen vor vielen entscheidenden Herausforderungen, die es zu bewältigen gilt. Der globale Klimawandel und die zunehmende Ressourcenverknappung sind dabei die bekanntesten Beispiele. Eine zentrale Herausforderung wird bei der Debatte gerne vernachlässigt, herabgewürdigt oder gar vergessen: Nämlich das Ernährungsproblem. Weltweit leiden immer noch ca. 850 Millionen Menschen an chronischer Unterernährung. Das Problem ist dabei kein Phänomen das strikt auf den Afrikanischen Kontinent begrenzt ist. Vielmehr sind viele Staaten im sogenannten »Globalen Süden« von Hunger und Mangelernährung bedroht. Die globale Unterernährung stellt aber nur eine Seite der Medaille dar. Spätestens seit dem Jahr 2008 ist das Problem der weltweiten Überernährung gleichermaßen dramatisch. Nach Schätzungen von diversen Organisationen sind ca. 1,4 Milliarden Menschen übergewichtig und knapp eine halbe Milliarde Menschen fettleibig (BMI > 30). Nimmt man all diese Zahlen zusammen, sind ca. 30% der Weltbevölkerung entweder unter- oder überernährt, was zu starken Belastungen für Gesundheit, Wirtschaft, etc. führt.Die Lösung für beide Probleme ist der Wandel zu nachhaltigen Ernährungssystemen. Der vorliegende Sammelband setzt sich mit diesen Themen auseinander und stellt sie in den Kontext einer neuen »Großen Transformation«.
