This first comprehensive review of the Maillard reaction and its applications shows the present state-of-the-art, including the most recent developments in its use. Describing the relevance of the reaction in areas of chemistry, geochemistry, nutritional and life sciences, leading scientists bring together both theoretical and practical aspects of the Maillard reaction.

Naturally Occurring Glycosides Edited by Raphael Ikan The Hebrew University of Jerusalem, Israel Naturally Occurring Glycosides summarises significant contemporary information on chemical, nutritional, biological and pharmacological aspects of naturally occurring glycosides. Though mainly found in plants, there are an overwhelming number of glycosides which occur in nature. Currently at the forefront of scientific investigation, these compounds have a variety of uses including the treatment of congestive heart failure, lowering cholesterol, flavourings, antibiotics and sweeteners. Naturally Occurring Glycosides presents 12 chapters dealing with chemical structure, occurrence, biosynthetic and biological activity of the following: Aminoglycosidic antibiotics; Anthocyanin glycosides; Cardiac glycosides; Carotenoid glycosides; Cyanogenic glycosides; Glycosinolates; Glycosidic bound volatiles in plants; Limonoid glycosides; Saponins; Steroidal glycoalkaloids; Steroidal oligosaccarides from marine sources; Terpenoid glycoside sweeteners. By reading Naturally Occurring Glycosides, researchers working in chemistry, biochemistry, biology, toxicology, physiology and pharmacology will gain a fascinating insight into the field of glycosides.

Natural and Laboratory-Simulated Thermal Geochemical Processes compares a series of thermal natural geochemical events with thermally laboratory-simulated processes. The emphasis is on the geothermal events occurring in nature compared with those simulated in the laboratory, thus furnishing important information at the molecular level for such processes. The book covers the following topics: + Generation of petroleum and its thermal cracking; + Pyrolysis of oil-shales; + Formation of coal and its gasification and liquification; + Thermal liquification of biomass; + Geothermal energy; + Thermal generation of fullerenes; + Thermal formation of diamonds; + Thermal analysis of organo-clay complexes; + Geochemical conditions for life emergence. This book updates the academic and industrial scientific community with the fate of organic and inorganic matter in our environment and especially in the geosphere when subjected to thermal treatment under natural and laboratory-simulation processes. The book is of interest to researchers in chemistry, geology, engineering, petrology, energy, and analytical laboratories, as well as for students specialising in the chemistry of natural products and geochemistry.

What is unique about this book? This book is intended for undergraduates, graduates and scientists in general. It introduces certain topics of natural products which are only taught in institutes of higher learning.Despite the fact that there exists a vast literature devoted principally or entirely to naturally occurring compounds, there are very few books or monographs of moderate length that provide an overall view of the field. There are many aspects of natural products that deserve a special emphasis unlikely to be encountered in a conventional course on organic chemistry. Among them are biosynthesis; metabolic transformations; and physiological and biological properties of some of the natural products. The field of the chemistry of natural products is so immense that it embraces an almost limitless scope of the compound types. This book covers the following topics of natural products: cannabinoids; toxic constituents from marine sources; natural sweeteners; generation of wines; biological markers; pheromones of insects and mammals; pest management; and secondary natural chemicals formed by microorganisms. It contains specialized work that describes the chemistry of separate classes of compounds such as steroids, terpenes, alkaloids, sugars, carotenoids, fatty acids and so on. It also includes data on compounds isolated from various classes of organisms such as lichens, bacteria and fungi, which are usually treated in special monographs. The topics in this book are unlikely to be found in general chemistry courses.
