The history of cane sugar from its origins in the east to its status as a luxury foodstuff and even medicine in the medieval period to a commodity produced and consumed globally in today’s world is well known. Yet archaeologically, sugar is an invisible commodity, its presence usually being inferred from the humble sugar pots used in the last stages of its sophisticated production process. This book attempts to redress the imbalance between history and archaeology by reporting on the excavation of a medieval sugar refinery, Tawahin es-Sukkar near Safi, situated south of the Dead Sea in Jordan. There it was possible to explore many of the steps in the sugar-making process. The book’s title refers to the industrial waste whose study has shed light on those steps. To place this refinery in chronological and economic context, excavation was extended to the adjacent ‘support town’ of Khirbet Shaykh ‘Isa; the book presents its results. The available archaeological evidence for sugar production across the Mediterranean is reviewed. There is particular emphasis on the sugar vessels and the light they can shed on the poorly understood relationship between primary production centres, refining, storage and consumption centres. The book, which is fully illustrated, can be profitably read by archaeologists, archaeological scientists, historians and visitors to Jordan alike.

Comparative endocrinology is one of the most rapidly developing subdis ciplines within the field of endocrinology, and it is having a significant impact on research at the molecular, cellular, organisma1 and environmental levels. Much of the current ferment in endocrinology is in reproductive endocrinology. The purpose of this volume on hormones and reproduction in fishes, amphibians and reptiles is to summarize our present understandings and to identify important research problems to be addressed in the area of comparative reproductive endocrinology. It was inspired by the gathering at Copper Mountain, Colorado, of eminent endocrine scientists from around the world on the occasion of the Tenth International Symposium on Comparative Endocrinology in July, 1985. While preparing for that meeting, we decided that a special volume on reproductive endocrinology was needed to summarize what is known and to stimulate research in particular directions. Why do we emphasize fishes, amphibians and reptiles? First, knowledge about the reproductive endocrinology of these ectothermic vertebrates can provide a clearer picture of the evolution of reproductive hormones and their effects on target organs. This comparative approach can lead to new theories about the evolution of reproductive control mechanisms. Second, studies concerning the reproductive endocrinology of "lower" vertebrates can result in development of "model systems" for application to studies of birds and mammals. Indeed, information about the patterns of reproductive control in ectothermic vertebrates can tell us which are evolutionarily stable and which are labile.

The transport stirrup jar was a vessel type used extensively in the Late Bronze Age III Aegean world. Found in a variety of contexts, the type was used both to transport and to store liquid commodities in bulk. The peak of the production and exchange of this jar corresponded with the time of economic expansion on the Greek mainland. On Crete, stirrup jars appeared at most major centers on the island. Their presence in large numbers in storerooms indicates the movement of commodities and the centralized storage and control of goods. The broad distribution of stirrup jars at coastal sites in the eastern Mediterranean and their presence in the cargoes of the Uluburun, Gelidonya, and Iria shipwrecks clearly shows their role in the extensive exchange networks within the Aegean and beyond. Because they represent significant Aegean exchange, tracing their origins and movement provides information regarding production centers and trade routes. This study concentrates on determinating of provenance of the jars and the subsequent tracing of exchange routes. The fully integrated research design is an interdisciplinary, collaborative archaeological project that embraces typological, chemical, petrographic, and epigraphic approaches in order to shed light on the jars' classification and origin. The results of the chemical and petrographic work constitute primary parts of the study. By establishing the origins and distribution of the jars, these vases are placed within their historical context. The identification of production centers and export routes is critical for a full understanding of the economic and political conditions in the Late Bronze Age Aegean and eastern Mediterranean.
