Based on the proceedings of a Symposium held during the 2002 World Congress of the Oxygen Club of California, 2002.

Healthful Lipids addresses critical and current regulatory issues and emerging technologies, as well as the efforts made toward the production of healthier lipids. This book examines the latest technological advancements and the emerging technologies in processing and analysis, health-related concerns, and strategies used in the production and application of healthful lipids. It also includes an in-depth patent review on enzyme modified and trans-free fats and oils. This book is a valuable reference not only to graduate students and individuals interested in food research, product development, food processing, nutrition, dietetics, quality assurance, genetic engineering of oil crops, oil processing, fat substitutes, and lipid biotechnology, but also to food industry professionals seeking background and advanced knowledge in lipids.

This monograph describes the most common gas chromatographic and infrared spectroscopic official methods required for the determination of trans fatty acids for food labeling purposes. The authors review the current status and limitations of the latest methods and discuss the numerous factors that may have an impact on accuracy and precision. The extensive discussion informs current researchers and analysts in nutrition and food chemistry and technology and should provide a stimulus for improving trans fatty acid methodologies.

Advances in Conjugated Linoleic Acid Research, Volume 2 is the second book in a series devoted entirely to conjugated linoleic acid. This book has updated information on the analysis, biochemistry and applications of conjugated fatty acids in an attempt to make Volume 2, in conjunction with Volume 1 (published in 1999), the most comprehensive, up-to-date sources of CLA-related information available today. Both scientific and commercial views are presented, with the same data sometimes interpreted differently.

First published in 2003. This volume includes proceedings from the 5th World Conference on Detergents- Reinventing the Industry: Opportunities and Challenges from The American Oil Chemists Society.

Demonstrating the quantum leap genomics represents in technology, this book documents the initial research strategies, the development of genomic tools and resources, and the legume-community consensus on the research objectives that will guide the genomic characterization of major legume crops. The book presents this technical theme in a manner that helps readers answer the question, "What is genomics?" And finally, this book helps readers formulate an opinion on the question, "Why is genomic research needed?" The application of this technology in legume crop enhancement will ensure that U.S. agriculture remains competitive in domestic and global markets for legumes and legume crop products.

Responding to government regulations that require declaration of the amount of trans fat present in foods, Trans Fats Alternatives provides cutting-edge research and insights into a this major industry issue. With contributions from major fats and oils suppliers, including Aarhus, ADM, Bunge, Cargill, Loders Croklaan, and Premium Vegetable Oils, the book covers the new regulations in detail, includes methods to analyze for trans fat, explores consumer reaction to trans fat labeling, discusses the nutrition facts, and supplies approaches to trans fat replacement/reformulation. It an indispensable guide for everyone who is interested in trans fats.

This new CD-ROM focuses on practical business processes such as pitching the benefits and attributes of the product and handling the process of going from patents to labeling. Presentations include information on product innovation, formulation, and successful information transfer. It provides material from the 2005 AOCS North Central Section's conference, Fats and Oils in the Food Industry, Business Success through Technical Innovations; a patent primer; and a listing of industry consultants. Additional subjects covered include omega-3 fatty acids, technology transfer, and the nutrition labeling dilemma of using trans or saturated acids.

This volume complements Lipid Oxidation Pathways, Volume 1 by focusing on the oxidation kinetics and mechanisms governing the behavior of different molecular species involved in lipid oxidation reactions. It provides a more detailed review of the reactions of other lipid molecules than conventional polyunsaturated fatty acids.

Fatty Acids in Health Promotion and Disease Causation focuses on heart disease and the role that fatty acids can play in its prevention and causation. It provides information on special populations, Native Americans, stroke, and cardiac injury as examples of areas where fatty acids play a key role. The book also discusses body composition, diabetic disease, and health promotion, and actions after transformation by oxidation. It includes coverage of fatty acids in health promotion and diseases such as cancer, intestinal microbes, and membrane functions. Finally the actions of omega-3 fatty acids are extensively investigated by global experts.

Useful to nutritionists, physicians, and public health professionals as well as food scientists and technologists, and process engineers, this book reviews the metabolism and health benefits as well as international safety and regulatory information of diacylglycerol oils. The book contains long-term clinical studies diacylglycerols' effects on energy expenditure, obesity, cholesterol, and sugar levels in patients. It also reviews physicochemical properties, application technologies, and processing of diacylglycerol-containing foods.

This book contains papers from the symposium "Critical Issues, Current and Emerging Technologies for Determination of Crude Fat Content in Food, Feed and Seeds," held in 2003 at the AOCS Annual Meeting in Kansas City, Missouri. The topics covered give a broad perspective of the challenges and issues of the value-added enhanced products. This book will be of interest to biotechnology professionals, processors, scientists, nutritionists, economists, new product development and business professionals, official agencies, and others actively engaged in the development and marketing of value-added products.
