Marc Haeberlin has a sublime culinary heritage: following in the footsteps of his father Paul, he is the fourth generation to cook at the Auberge de L'Ill in Illhaeusern, which has been in existence for over 150 years, and has held 3 stars in the Michelin guide for 50 years. He has also worked alongside Paul Bocuse, and Jean and Pierre Troisgros.According to the Michelin Guide:'The Auberge de l'Ill is much more than just a restaurant. It embodies the Alsatian inn in all its glory - an inviting and friendly place, untouched by the passage of time, where every customer is welcomed like a member of the family... It is an institution in the region, but also renowned throughout France and beyond. Since it was established in 1882 the restaurant has made a name for itself thanks to its matelote with riesling and dishes based on local game. Marc Haeberlin, grandson of the founders, now serves the classical repertoire (foie gras terrine served by the spoonful, frog's leg mousseline, and salmon souffle) alongside more modern creations.'The legend lives on and has expanded with the creation of the Hotel des Berges and the opening of three Auberges de l'Ill in Japan.Laurent Dupont's magnificent photographs throughout the book capture not only the elegance of the plated recipes but the beauty of the countryside and especially the Ill, the placid river flowing under the willows past the family's inn.

Following the inter-Allied Casablanca Conference in January 1943 the outline for the Combined Bomber Offensive was agreed and resulted in early February with the 'Casablanca Directive'. This required the "progressive destruction and dislocation of the German military, industrial and economic systems and the undermining of the morale of the German people to a point where their capacity for armed resistance is fatally weakened". This directive was clarified in June when the Combined Chiefs of Staff issued the 'Pointblank Directive' that stated that the highest priority targets were the fighter aircraft factories to ensure that in the coming invasion of France the enemy would not have air superiority. When these directives were issued it was envisaged that as well as attacks by RAF Bomber Command and the US Eighth Air Force based in England, the strategic bomber forces in Italy would begin operations once suitable bases were available. After the Allied landings in Italy and resulting collapse of the Italian fascist regime a network of bomber bases was hastily developed. Thus, on 1 November 1943 the US Fifteenth Air Force was formed to conduct the daylight bombing offensive against strategic targets in southern Germany and across South-Eastern Europe. Key among which were the Rumanian oilfields and traffic along the River Danube. This new formation was joined by the smaller, but highly effective 205 Group, RAF that was trained and equipped for night bombing so mirroring their equivalent British-based formations. The damaging attacks on the Reich's oil supplies and the hugely effective Danube mining campaign conducted at night by 205 Group delivered huge strategic effect. The latter reduced vital oil and goods traffic into the Reich to a trickle but also dislocated the supply and logistics train into the southern part of the Eastern Front so giving manifest support to the Soviets. In this volume the early months of this hugely significant air campaign are described in minute detail, including the actions of Germany's Axis allies such as Hungary, Rumania and Bulgaria that were encountered for the first time by the Western Allies. Description of the strategic bomber campaign in the Mediterranean theatre will conclude in Volume Seven.

Here is a book which is guaranteed to fascinate both cook and traveller; it provides a wealth of information on the unique history and art of French charcuterie. Every town in France has at least one charcutier, whose windows are dressed with astonishing displays of good food; pâtés, terrines, galantines, jambon, saucissions sec and boudins. The charcutier will also sell olives, anchovies, condiments as well as various salads of his own creation, making a visit the perfect stop to assemble picnics and impromptu meals. But the real skill of the charcutier lies in his transformation of the pig into an array of delicacies; a trade which goes back at least as far as classical Rome, when Gaul was famed for its hams. First published in 1969 but unavailable for many years, Jane Grigsons Charcuterie and French Pork Cookery is a guidebook and a recipe book. Written in her inimitable style, she describes every type of charcuterie available for purchase and how to make them yourself. She describes how to braise, roast, pot-roast and stew all the cuts of pork, how to make terrines, how to cure your own ham and make your own sausages.

Juan Mari Arzak is the third generation of chefs at the restaurant in San Sebastian that bears his family name. Arzak has held three Michelin stars, the maximum that can be awarded, since 1989. It is a member of many of the world's most prestigious associations and appears in countless restaurant guides. It has also been ranked on the World's 50 Best Restaurant List since the ranking's early days. This book tells the story of a family and a cuisine. It takes a look at Juan Mari's role as a cutting-edge chef and restaurateur, and an inspiration for generations of young cooks. It commemorates the 40th anniversary of the birth of the so-called New Basque cuisine, of which Juan Mari was the leader, a movement which formed the germ of the current Spanish gastronomic revolution, and it contains the most emblematic recipes of the last ten years of his work, as well as the most emblematic of his career. For nearly twenty years Juan Mari has shared the role of Chef at Restaurante Arzak with his daughter Elena. The book also follows Elena's rise in the kitchen, recognizing the essence of her creative process and the magic she and her father create through the design and balance of plates and menus. This introduction to the close-knit team of visionaries and their innovative recipes offers a glimpse into the future of Restaurante Arzak.

Jane Grigson wrote of Italian Food ‘Basil was no more than the name of bachelor uncles, courgette was printed in italics as an alien word, and few of us knew how to eat spaghetti or pick a globe artichoke to pieces. ... Then came Elizabeth David like sunshine, writing with brief elegance about good food, that is, about food well contrived, well cooked. She made us understand that we could do better with what we had.’Published in 1954 the importance of this book, which required a full year's research in Italy, can only be appreciated when you realise that she was working in a post-rationing England which regarded Italian cuisine as nothing more than variations on pasta and veal. What she discovered was an enormous wealth of regional diversity in ingredients, methods, and even language, where the same pasta shape can be called three or four names in different parts of the country. She understood that all Italian cooking is regional; there is no 'national' cuisine and so there are eight recipes for aubergines, fourteen for artichokes, five for fennel and seven for lentils, all from different regions. But if such descriptions seem to today’s reader overly thorough it is because many of her 1950's audience would have never heard of risotto, gorgonzola, prosciutto or even olive oil, let alone been able to purchase them. This is a critical and analytical look at Italian food – her personality and point of view come out on almost every page – organised by type of dish rather than by region and is full of details of kitchens and cooking by painters from the 14th, 15th and 18th centuries. The book is filled with asides and quotes from Italian writers and thinkers and as confirmation that this is more a work of scholarship than a simple book on cookery, there are appendices of bibliographies and notes on wine. If you want to explore the authentic regional roots of the Italian kitchen, Elizabeth David's masterpiece is the place to start. And the joy and relevance of this book today is that recipes that could only be read 60 years ago can now be cooked and savoured.Elizabeth David’s acclaimed writings are often cited as an inspiration by many of today’s leading chefs, as well as home cooks, and are essential to any serious cookery book collection.

First published in the 1970s to great critical acclaim Richard Olney’s Simple French Food follows in the tradition of the writing of Elizabeth David and Jane Grigson, and Grub Street are re-issuing this classic work in the same format and size as Elizabeth David Classics and Charcuterie and French Pork Cookery.

Richard Olney – responsible for the legendary Time-Life cooking series as well as other cooking classics such as his wonderful Simple French Food (also published by Grub Street) – moved to Provence in 1961 and had the good fortune to befriend Lulu and Lucien Peyraud, the owners of the noted Domaine Tempier vineyard in Provence, not far from Marseilles.Lulu’s Provençal Table tantalizes the reader with Olney’s descriptions of the regional food served as the vineyard meals at the domaine. Then he lovingly transcribes Lulu’s recipes. She has an empathy with and understanding of Provençal ingredients that is inspirational. There is succulent Pot-Roasted Leg of Lamb with Black Olives served with Courgette Gratin, and Potato and Sorrel Gratin, delicious with just six ingredients. There are plenty of simple recipes, but the recipe for bouillabaisse is a fascinating 10 pages long. Her 150 recipes read like a roll call of the best of Provence ̶ tapenade, anchoiade, brandade, pissaladière, bagna cauda, sardines grillées, bouillabaisse, bourride, daurade au fenouil, daube, gigot à la ficelle and ratatouille. Starting with aperitifs and amuse-gueule and finishing up with fruit desserts, hers is classic French country cooking, featuring everyday ingredients cooked with respect for their nature and flavour.Having been described as ‘a gastronomic love poem to France’s most exhilarating region’, this is an essential book for any serious food lover’s library.

The grandson of a prominent Edinburgh lawyer, and the son of a self-made farmer in South Africa and Southern Rhodesia, Teddy Peacock-Edwards was born on 27 May 1915, in Kokstad, South Africa. He was one of eleven young men from Southern Rhodesia recruited into the RAF in 1938 and thence followed a multi-varied time in the RAF encompassing the full span of the Second World War.This book, written by his acclaimed fighter pilot son, Rick Peacock-Edwards, describes his father’s formative years and gives his overall impressions of his father as an individual, a father, and fighter pilot and then later covers Teddy’s experiences as a Fairey Battle pilot in France from September 1939 to June 1940 as a part of the British Expeditionary Force. The next phase of his life involved conversion to the Hurricane and as a pilot in the Battle of Britain, based at Kenley in Surrey on 253 Squadron. This period was immediately followed by an involvement in the defence of Malta in 1941, mainly as a flight commander on 261 Squadron, again equipped with Hurricanes. The story then progressively moves towards the Far East leading to a period of more than two years in Ceylon where he fought the Japanese during their Easter Sunday 1942 surprise attack on Colombo. Teddy also met his future wife, Jill, whilst in Ceylon. Wartime experiences are enhanced by reference to over 60 letters written by Teddy to his sister back in Rhodesia during the Second World War.The rest of the book covers the period from his return from Ceylon in the summer of 1944 to his post-war involvement in the RAF, and his return to South Africa. Throughout these pages, Rick gives his overall impressions of Teddy as an individual, father and fighter pilot. A fascinating insight from someone who, because of his comparative experiences and achievements, understands better than most the requirements for becoming a successful fighter pilot. A unique tribute to a remarkable man.

For 82 years the Royal Flying Corps (RFC), which in 1918 became the Royal Air Force (RAF), maintained a permanent military aviation presence in the Far East. Throughout that time a huge variety of squadrons, flying many different aircraft types, together with all the necessary operational, technical and administrative support, took on all that was asked of them. The first RFC units arrived in India in 1915. RAF India grew substantially in the interwar period and throughout World War Two. Various changes in the command structure finally saw the creation of the Far East Air Force (FEAF) in June 1949, covering South East Asia and Hong Kong. In the 1960s the UK government decided to withdraw all forces East of Suez and on 31 October 1971 the FEAF disbanded and most UK forces withdrew from Singapore at this time. The last RAF unit to leave the region was 28 Squadron flying. They had been operating Whirlwind and Wessex helicopters in Hong Kong until the territory was handed back to China in 1997.RAF Boys in the Far East illustrates what it was like for those air and ground crew who were there by telling their stories in their own words, supported by explanation of the situations at the time and photographs primarily drawn from veterans’ own collections. The stories are as varied as the locations, the units and the personnel; everyday operations, exercises, triumph and tragedy, off duty time, and of course, the humour for which the RAF is renowned.Chapters focus on differing aircraft roles and their operations, including emphasis on the war years in India and Burma, and the Singapore era with actions such as Operation Firedog and the Indonesian Confrontation. Today those veterans who look back on their time served in the FEAF do so with a great deal of pride, and rightly so. This is their story.

Robuchon is the most influential French chef of the post-nouvelle cuisine era. Since the mid-eighties, he has been called the primus inter pares of Paris’ three star chefs for his work both at Jamin and at his eponymous restaurant. He is renowned for the relentless perfectionism of his cuisine. His food was seen as instrumental in leading French cuisine away from the excesses – and excessive reductionism – of nouvelle cuisine. In particular, his cuisine is seen as harkening back to a more authentic, even bourgeois French cuisine – cuisine actuelle – which focuses on making each ingredient taste of itself. He has mentored such distinguished chefs as Gordon Ramsay and Michael Caines and his signature dishes include a cauliflower cream with caviar and potato puree. In “The Complete Robuchon” he offers us his recipes (over 800), secrets and tips: from the perfect omelette to vegetable soup, leg of lamb to marinated mussels, to his renowned potato puree every dish is described in detail starting with the ingredients, he tells you how to clean and prepare them down to the way to hold the pan and precise cooking times. It is all here – a catalogue of the basics of French cuisine and a broad sampling of dishes that have earned the author his titles of glory and his truly imaginative recipes from L’Atelier.Born in Poitiers in 1945, Joel Robuchon became the official chef of La Tour de France, where he learnt a variety of diverse regional techniques. At 28, he became head chef at Harmony-Lafayette, overseeing 3,000 meals a day. In 1981 he launched Jamin in Paris and within three years had received three Michelin stars. In 1996 he left his Parisian restaurant, establishing L’Atelier de Joel Robuchon in Tokyo. He opened another L’Atelier in Paris in 2003 and has since established Ateliers in Las Vegas, New York and London.

First published in 1996 (under the title Everyone Eats Well in Belgium Cookbook and selling over 50,000 copies) but out of print for many years, Ruth Van Waerebeeks wonderful compendium of Belgian recipes is now back by popular demand in a completely new redesigned edition with full colour photography throughout by the internationally renowned Belgian photographer Regula Ysewijn, also known as the blogger Miss Foodwise. Belgium is a country that boasts more 3 star restaurants per capita than any other nation, including France. It's a country where home cooks ? and everyone, it seems, is a great home cook ? spend copious amounts of time thinking about, shopping for, preparing, discussing, and celebrating food. With its hearty influences from Germany and Holland, herbs straight out of a Medieval garden, and condiments from the height of Flemish culture, Belgian cuisine is elegant comfort food at its best ? slow-cooked, honest and comforting. It's the Sunday meal and a continental dinner party, family picnics and that antidote to a winter's day. In 250 delicious recipes, here is the best of Belgian cuisine. Veal Stew with Dumplings, Mushrooms, and Carrots, Smoked Trout Mousse with Watercress Sauce, Braised Partridge with Cabbage and Abbey Beer, Gratin of Belgian Endives, Flemish Carrot Soup, Steak-Frites, Steamed Mussels, and desserts, some using the best chocolate on earth: Belgian Chocolate Ganache Tart, Almond Cake with Fresh Fruit Topping and Little Chocolate Nut Cakes. As the Belgians say, since everybody has to eat three times a day, why not make a feast of every meal? Ruth Van Waerebeek is an adventurous traveller, international chef and cookbook author from Belgium. She was born and raised in the medieval town of Ghent where she learned to cook at the side of her mother, grandmother and her great-grandmother. She was a chef in two leading restaurants in Ghent before she set off travelling round the world. In the 90s she worked in full time teaching at a school of culinary arts in NYC. Since 2000 she has been the brand ambassador and the house chef of Chiles most important Winery Concha y Toro. She now runs the Mapuyampay Hostal Gastronomico & Cooking School in the heart of Chiles wine country. Her cooking classes have been profiled in Gourmet Magazine as one of the 50 best cooking vacations in the world.

From the young airmen who took their frail machines high above the trenches of World War I and fought their foes in single combat there emerged a renowned company of brilliant aces - among them Ball, Bishop, McCudden, Collishaw and Mannock - whose legendary feats have echoed down half a century. But behind the elite there were, in the Royal Flying Corps, many hundreds of other airmen who flew their hazardous daily sorties in outdated planes without ever achieving fame. Here is the story of one of these unknown flyers - a story based on letters written on the day, hot on the event, which tells of a young pilot's progress from fledgling to seasoned fighter. His descriptions of air fighting, sometimes against the Richtofen Circus, of breathless dog-fights between Sopwith Pup and Albatros, are among the most vivid and immediate to come out of World War I. Gould Lee brilliantly conveys the immediacy of air war, the thrills and the terror, in this honest and timeless acount.Rising to the rank of air vice-marshal, Gould Lee never forgot the RFC's needless sacrifices - and in a trio of trenchant appendices he examines, with the mature judgement of a senior officer of the RAF and a graduate of the Staff and Imperial Defence Colleges, the failure of the Army High Command to provide both efficient aeroplanes until mid-1917 and parachutes throughout the war, and General Trenchard's persistence in a costly and largely ineffective conception of the air offensive.

Dal is to India what pasta is to Italy. Cheap to produce, highly nutritional, suitable for long storage and capable of being cooked in a basic pot on an open fire, dal has been providing nourishment to millions of Indians for millennia. It truly is a pan-Indian dish consumed by rich and poor alike. It is high protein and has practically no sugar in fact it is known as poor mans meat in India hence doctors now include this as an essential item in a diet for diabetics.

It is now more than 40 years since "Fighters over the Desert" was published, and nearly as long since this was followed by "Fighters over Tunisia". Both volumes have long been out of print and collectors' items, but, despite much prompting, Christopher Shores has resolutely refused to permit their reprinting until he amassed so much more information. He has also long nursed a desire to expand the coverage to encompass the operations of the other types of aircraft involved in this interesting and important theatre of war - the bombers, reconnaissance aircraft and maritime units. Further, it is his intention to extend the period covered to include the later operations over Sicily, Italy, the Aegean area, the Balkans and Southern Europe. This then represents the first volume of a seminal series dealing with all these aspects and areas, which will also tie in with the earlier 'Grub Street' volumes which he and his collaborators have produced. Thus a full coverage of all aspects of aerial operations throughout the whole of the Mediterranean area will be the ultimate result.Further, these volumes will link appropriately and directly with his other works of this nature, dealing both with the Far East and the war in Europe. Readers will then be able to follow the wartime careers of units and personnel involved from volume to volume throughout the war. Operations directly over the main battlefronts will be dealt with as previously, on a daily basis. However, to allow a clearer view to be obtained of operations elsewhere in the theatre, or of a different nature, separate chapters will deal specifically with the night bombers, the air defence of the base areas, and the naval co-operation activities. Wide use of maps will be made throughout this and subsequent volumes together with a considerable number of photographs integrated into the text. Long awaited by many, if any work can be said to be comprehensive and definitive, this is it.

The first volume of this series dealt with the initial 19 months of the air war over the Western Desert of North Africa. This volume picks up the story as the 8th Army, following its hard-fought success in Operation Crusader, was forced back to the Gazala area, roughly mid-way between the Cyrenaican/Tripolitanian border of Libya and the frontier with Egypt.

Pierre Hermé is universally acknowledged as the king of French pastry with shops in Tokyo, Paris and London. He is the best, and has even been described as a couturier of pastry. This is a man at the top of his art and there is no question his macarons are in a league of its own. Macarons are the aristocrats of pastry; these brightly coloured, mini meringues, daintily sandwiched together with gooey fillings, have become a holy grail for cookery fanatics and there are even food blogs dedicated to them. Like Pierre Hermé’s famous macarons, it would be difficult for any macaron book to surpass this one and indeed the hardback edition has been a universal bestseller (still in print 978-1-908117-23-6). There are 208 pages of recipes and beautiful food photography, and because making macarons is mostly about technique, rather than just a standard recipe, readers will appreciate the 32-step-by-step photo-illustrated instructions for making shells and fillings. All the classics are here like dark chocolate, praline, coffee, and pistachio, but others feature the more unusual macarons that Hermé is justly famous for: Isfahan is one, with lychee, rose and raspberry, Arabesque with apricot and pistachio, Satine with passion fruit, orange and cream cheese, Mandarin and pink pepper, black truffles, balsamic vinegar as well as a bright-green macaron filled with fresh mint. Anyone interested in making macarons will find MACARONS the best book in print.

Italian food is diverse, full of variety and above all designed for enjoyment. But it is also traditionally rich in products of animal origin. Elizabeth David's books belong in the libraries of everyone who loves to read and prepare food and this one is generally regarded as her best; her passion and knowledge comes through on every page She was one of the foremost writers on food in the latter half of the 20th century and this book has her most celebrated writing. French Provincial Cooking should be approached and read as a series of short stories, as well written and evocative as the best literature. The voice is highly personal and opinionated, sometimes sharp but always true and always entertaining. Here is a long essay on French cuisine, offering background stories and sketches of recipes more than the slavishly didactic type of recipes that most modern readers might be used to today. For many Elizabeth David was the first to introduce us to the French notion of la cuisine terroir, sometimes interpreted as `what grows together goes together'. For David, this is the heart of regional cooking, and the thing which most distinguishes it from cooking in haute cuisine restaurants where diners arrive at any time or any season and expect to be able to order any well known French speciality. One of the passages which best characterizes David's approach to a lot of cooking is her opening statement on the perfect omelette: `As everybody knows, there is only one infallible recipe for the perfect omelette: your own.' The book starts with a short essay on each of the major culinary regions of France, starting perhaps not surprisingly with Provence which is blessed with an abundance of produce. The largest portion of the book consists of chapters on cuisine by type of dish: Sauces, Hors-D'oeuvres and Salads, Soups, Eggs and Cheese, Pates and Terrines, Vegetables, Fish, Shellfish, Meat, Composite Meat Dishes, Poultry and Game and Sweet dishes. The book is all the more valuable in that it paints a picture of a cooking style which existed before modern equipment such as the food processor. Most importantly, the recipes work if your aim is to produce the most excellent food imaginable. What initially may seem to be annoying details (e.g., for omelettes, eggs ‘should not really be beaten at all, but stirred,’ whereas for scrambled eggs, they should be ’very well beaten’) are actually secrets to be treasured, that elevate a good dish to a superb one. The lesson is that good food should be done simply, but it takes care, attention to detail, and frequently, time. A hardback edition of French Provincial Cooking has been unavailable for many years and Grub Street is re-issuing it because of overwhelming demand. It should become as popular an edition as the best-selling Elizabeth David Classics.

An Omelette and a Glass of Wine, offers 62 articles originally written by Elizabeth David between 1955 and 1984 for numerous publications including The Spectator, Gourmet magazine, Vogue, and The Sunday Times. This revered classic volume contains delightful explorations of food and cooking, among which are the collection's namesake essay and other such gems as Syllabubs and Fruit Fools, Sweet Vegetables, Soft Wine, Pleasing Cheeses, and Whisky in the Kitchen. Her subjects range from the story of how her own cookery writing began to accounts of some restaurants in provincial France, of white truffles in Piedmont, wild risottos on the islands of the Venetian lagoon and odd happenings during rain-drenched seaside holidays in the British Isles. Here we can share her appreciation of books, people who influenced her, places she loved and the delicious meals she enjoyed. Some of the best essays are those about others who wrote about food such as Norman Douglas and Mrs Beeton. She writes so vividly that we can see, taste and even smell the dishes she describes. Many of these pieces, such as I'll Be with You in the Squeezing of a Lemon, from 1969 - about cooking with lemons - barely show their age. But even if they did, you wouldn't care, because of the rich store of information that David shares and the literary grace with which she imparts it. Some articles include recipes, but for the most part this is a volume nicely sized to curl up with or to take on a trip. Articles, book reviews and travel pieces, they will be new to many of her readers and a delight to all for their highly personal flavour. Jane Grigson praised it for including all the dishes most closely associated with her, Spiced Beef, Salted Welsh Duck and Syllabub. Her many admirers will cherish this new hardback edition for its 320 high quality pages casually interspersed with charming black and white illustrations and some photographs. It is a book sure to appeal to the 'Elizabeth David' book collector and readers coming to know Ms. David for the first time will marvel at her wisdom and grace.
